Chef Romi Gilat is a pastry chef and graduate of the Culinary Institute of America, with experience in some of New York City’s most respected bakeries, including Dominique Ansel and Supermoon. She served as the pastry chef at the Michelin-starred restaurant Shmoné in the West Village, where she developed a refined, detail-driven approach to plated desserts.
Today, as pastry chef at Oresh, a new concept by Chef Nadav Greenberg and the team behind The Corner Store, Chef Romi is behind one of the most talked-about desserts of 2026 — combining bakery technique, naturally leavened elements, and a modern approach to flavor and presentation.
